2 cups Golden Sunland brown rice, washed & drained
1 medium Bombay onion finely sliced
3 tablespoons ghee/ olive oil (vegan substitute)
1 tbsp oil
4 cups chicken stock/ vegetable stock
salt to taste
Dry Spice Mix
1 cinnamon stick
2 star anise
2 green cardamom
Over a medium fire, heat the ghee & oil & fry the Dry Spice Mix until fragrant, adding the sliced onions & sautéing them until they become soft.
Lower the heat and add the Golden Sunland brown rice, mixing it up so that the rice grains are sufficiently coated with the spiced oil mix.
Add in 3 cups of stock, season to taste & stir well, covering the pot with a tight lid & cook over a slow fire.
Check occasionally & add more stock & water if the rice is still not cooked sufficiently.
Once rice is cooked, fluff up the rice with a fork & serve hot.
Garnish with coriander leaves & fried shallots.
