Burrito Brown Rice Bowl

Here's a healthier take on a Mexican burrito - a burrito-inspired grain bowl! Hearty, protein-packed and flavourful, perfect to take on a busy weekday.




Ingredients:


1 cup The Little Rice Company brown rice, freshly cooked

1/2 cup black beans (able to use canned) or black lentils

1/2 a bell pepper, sliced

1 small avocado

1/2 cup edamame, shelled

1 tomato, chopped

2 teaspoons olive oil

1/2 tsp paprika

1/2 tablespoon lime juice

1 teaspoon honey

1 clove garlic, minced

Salt and pepper


Directions:


  1. If using raw beans or lentils, boil until tender.

  2. Meanwhile, mix tomatoes with lime juice, honey and minced garlic. Set aside in fridge for 30 minutes if possible.

  3. Heat a pan, add oil. Stir fry bell pepper and beans or lentils until warmed through. Add paprika and salt.

  4. Mash avocado and season with salt and pepper.

  5. Assemble bowl: Dish rice into 2 bowls, top each with seasoned tomatoes, beans/lentils and peppers and avocado.
